Meet Executive Chef Jean Paul Lair

Born in Vichy, France Chef Jean Paul studied at the Hotel School in the same city.

He started his apprenticeship at the age  of 18 in this Spa resort’s best hotels,  known worldwide for their unique water resources.

Wanting to widen his Horizons Jean Paul   decided to discover the US in 1979 and left for Lake Tahoe to work at several restaurants in that resort town.

He took a one year sabbatical to travel around the world to look at the different ethnic cuisines to then return to Palm Springs where he took the position of Sous- Chef at Gaston’s, a fine restaurant on Tahquitz.

In 1989 he came to Le Vallauris to assist Mr. Bruggemans’ Executive Chef in the kitchen and subsequently succeeded him as executive chef of this famous dining place.

Jean Paul concentrated in developing the French – Mediterranean Cuisine to perfection. Many acclaim that Jean Paul is one of the Valley’s finest Chefs.
